Champagne is the beverage of choice for many on New Year's Eve. For a late night party, a cheese board may be the best thing to pair with your champagne. Here are a few suggestions.
Banfi Rosa Regale is aromatic with a hint of rose petals and raspberries. Rosa Regale marries well with chocolate, especially dark or bittersweet. It can also be enjoyed with strawberries, fruit salads and a wide range of desserts.
Korbel Brut is light and crisp, with spicy fruit flavors and a medium-dry finish.
Cordon Negro Brut is crisp, clean and well balanced. It has a lower acidity level than most champagnes, which gives it a softer, smoother flavor. It is medium-bodied with a moderately long and clean finish.
Domaine Ste. Michelle Blanc de Blanc is distinctively spicy. This Washington bubbly delivers pear, spice and yeast notes that persist on the finish.

Try pairing some traditional favorites such as Brie, Blue and Cheddar cheese with something a little different, like Drunken Goat, Parrano, Double Gloucester or Cranberry Stilton.
